The Fox X-Men saga runs on two timelines. The original trilogy (X-Men, X2, The Last Stand) follows one continuity. First Class starts a soft reboot with a new cast in the 1960s, and Days of Future Past literally rewires the whole thing in 1973. Everything after it, from Apocalypse to Dark Phoenix, belongs to the corrected timeline.
Our story order stitches both timelines plus Deadpool and Logan into one watch that honors internal chronology. For a shorter run, watch the First Class tetralogy, then Days of Future Past, then Logan and the Deadpool films. The two Deadpool films break the fourth wall and do not care about continuity, which is the point of them.
Doomsday changes the calculus again. Marvel's official prep list includes X-Men and X2, and the film's cast announcement read like a Fox reunion. The 20-year-old timeline suddenly matters.

Should I watch X-Men in release or chronological order?
Release order. Chronological order (First Class first) spoils the original trilogy's reveals and the two timelines fight each other until Days of Future Past merges them.
Do the X-Men movies connect to the MCU?
Since Deadpool & Wolverine and the multiverse arc, yes, loosely. The Fox timeline is now one of the universes the MCU can reach, and Doomsday uses that door.
